Vegan Raw Tomato Soup
Today, I will be sharing a fresh, raw tomato soup recipe that will be sure to transport you back into a comfy state of mind. This recipe is of course raw, vegan, gluten-free, and super delicious and healthy. You won't believe this soup does not have any cream, milk or even butter! This recipe is super simple and will not take you long at all!
You will need the following ingredients and amounts:
- 4 medium tomatoes (1 lb & 8 oz.) [I used heirloom tomatoes]
- 2 cups of celery
- 1/2 cup of yellow onion
- 1/3 cup of macadamia nuts (1.5 oz.) (We offer some here)
- 1 tbsp of Braggs Liquid Aminos OR 1 tsp of Himalayan Pink Salt
You will also need a blender!
Optional Additions:
- Sprinkle of our Kale Yeah! Seasoning (You can find that here)
- 1 clove of garlic
- 1 tbsp of fresh basil (not dried!)
Instructions:
Step 1: Wash and then dry off your vegetables and then cut the vegetables (yellow onion, celery, and tomato) into small, cubed sized pieces.
Step 2: Measure out 1/3 cup of your macadamia nuts and throw them into the blender alongside the tomatoes, onion, and celery. Do not blend your garnish!
Step 3: Blend until slightly thick and warm, but not too watery. (Use your best judgement!)
Step 4: Pour out into a bowl of choice and top off with your garnishes of choice!
Step 5: Enjoy immediately or refrigerate later. (Make sure to take out the soup a few hours before consumption to warm up its temperature!)
